Lamb Shank Rogan Josh is a popular Indian dish, and thanks to this guide from the kitchen teamat Atrium Restaurant in Singapore, you can now recreate succulent mutton rogan josh in the comfort of your home. Just have a look at this lamb shank recipe!

Atrium Restaurant’s Mutton Recipe (serves 8-10)

Lamb Shank Rogan Josh ingredients

  • 1kg lamb shank
  • 2g garam masala powder
  • 100g ghee
  • 2 bay leaves
  • 1 stick of cinnamon
  • 5 green cardamom pods
  • 150g tomato paste
  • 80g ginger paste
  • 100g garlic paste
  • 100g onion paste
  • 500g of plain yoghurt
  • 1 litre water
  • 1 tsp chilli powder
  • 2 tsp fennel powder

Atrium Restaurant’s cooking method:

#1 Heat the ghee in a pan and cook onion, garlic and ginger paste, stirring occasionally, until it has softened and brown.

#2 Add the rest of the spices and cook for another 5 minutes.

#3 Add the lamb shank, tomato paste and yoghurt to the pan, with the water, then bring to a simmer. Put the lid on the pan and turn down the heat to slow cook for another 3 hours.

#4 Remove the cover and season to taste for the perfect mutton rogan josh!
